- Vintage Conditions The 2007 vintage was earlier than an average year due to a warm spring and consistent temperatures throughout ripening. This produced Sauvignon Blanc with great flavour intensity and natural acidity (especially from our vineyards in the Southern half of the Margaret River region where fruit for our X&Y Sauvignon Blanc was sourced).
- Grape Varietal Sauvignon Blanc
- Vinification and Maturation Regular monitoring of sugar and flavour development was undertaken throughout ripening with the fruit being harvested in the coolest part of the night and early morning to capture the fresh grassy and lifted tropical fruit characters that Sauvignon Blanc from this region is renowned for.
- Winemaker Matthew Byrne's Notes
- Colour Very pale straw with a strong green tint.
- Aroma Intensely varietal with pungent tropical fruits like lychee and passionfruit dominating the nose which also shows notes of kiwi fruit, honeysuckle and snow pea.
- Palate Juicy and succulent with touches of lime freshness and a long flavoursome finish.
